questions Kyle gets a lot

FAQ

Answered once so Kyle doesn't have to answer them on his phone with greasy fingers.

Is your jerky gluten-free?

+

Most of it. Original Tug, Reaper's Reach, Brisket's Revenge, and Smoked Maple are gluten-free. Teriyaki Twist contains soy sauce, which usually means gluten. If you have celiac, stick to the others or holler at Kyle and he'll double-check the batch.

How long does the jerky last?

+

Sealed: up to 12 months in a cool, dry pantry. Opened: 1–2 weeks if you're being honest, 3 days if you're being normal. Kyle has had a bag last 6 months in a glove box. He doesn't recommend it but he's not your dad.

Do I need to refrigerate it?

+

Not until you open it. Once it's open, fridge is best, especially in summer. Vacuum-sealed jerky is shelf-stable but it ain't immortal.

Is jerky keto?

+

The plain ones are basically keto candy. The sweet ones (Smoked Maple, Teriyaki Twist) have added sugar so check the bag. Kyle is not a nutritionist. Kyle is a guy who owns a smoker.

Do you ship internationally?

+

No. Kyle ships to the lower 48. Hawaii and Alaska on request — it'll cost you and it'll take a minute. International is a customs paperwork nightmare that one man with a smoker cannot win.

How long does shipping take?

+

USPS Priority, 2–4 business days from the day Kyle drops it at the post office. Kyle ships Tuesdays and Fridays. If you order Saturday at midnight, your bag is going out Tuesday.

When are you restocking?

+

When Kyle's wrist recovers. He pulls fresh every week and posts on the site when bags drop. Sign up for the holler list on the contact page and he'll yell at you when there's jerky.

What cut of meat do you use?

+

Eye of round and top round for the lean stuff. Brisket flat for Brisket's Revenge — that's where the bark comes from. All sourced from a local processor that doesn't know they're famous now.

Do you use liquid smoke?

+

No. Kyle has opinions. See: Mesquite vs Apple vs The Trash in the Smokebook. Strong opinions.

Can I get a sample pack?

+

Yep — when it's in stock, the Sampler Pull gets you all six flavors in mini-bags with a handwritten note from Kyle. The note is usually an apology for something.

Is the spicy one actually spicy?

+

Reaper's Reach is hot. Not a 'restaurant menu hot,' actually hot. Kyle made his brother cry with it once. If you can't handle a habanero, start somewhere else.

Do you do custom orders or wholesale?

+

Custom: occasionally, ask Kyle. Wholesale: not yet — Kyle would have to hire a second Kyle and that's a whole legal thing.
